I've actually never tried earl grey ice cream before this one, but I do love earl grey tea and bergamot (a type of lime) is one of my favourite scents in the world. So it's no surprise that this definitely leans into the berg side of earl grey! I've heard it pairs really nicely with a little slice of cheesecake, and that it *may* be reminiscent of fruit loops. It took a solid year of recipe testing to find an ice cream base that i was really happy with, and i put strawberry off for a long time because I knew it was going to be my white whale. the water content in strawbs is outrageously high which can lead to a really icy ice cream. it's also why i suspect there are no dairy-free strawberry ice creams to be found. nailing this one was one of my finer achievements, i'm so pleased with it. no more strawberry sorbets, please!
