Spring surprisingly smells like strawberry cotton candy, without being sweet. It also smells like, well, plums! The ripest ones though - we get them freshly picked out of Niagara once each year. Petra is a still wine, with just enough natural bubble to protect it without any added sulphites. It's a single varietal De Chaunac wine, with 16 days of carbonic maceration*.Petra is made of grapes from 35 year old vines, grown by our friend Douglas Backus in Lincoln Ontario. The grapes were hand picked by the Backus family, hand sorted by us, and bottled without any added sulphites whatsoever.And of course, it was completely wild fermented.Volume: 750mlABV: 7.6%

Hand-picked organic indigenous grapes (Raboso, Marzemina, Corbinella and Turchetta) are refermented in the bottle after primary tank fermentation. Mas Carlot is situated in the south of the Rhône Valley, extending across 76 hectares of pebbly land southeast of Nîmes. This seductive rosé is a traditional blend of Grenache (50%), Syrah (40%) and Mourvèdre (10%). Beautifully pale in colour and soft in texture, this is probably the most fashionable vintage to date. Delicate aromas of raspberry, watermelon, citrus fruits & herbes de Provence flow from the glass. The flavours are fruity, dry and crisp with an elegant balance & structure. We are Fausto and Cinzia Cellario, third generation of winemakers in the village of Carrù, on the western outskirts of the Langhe hills. We believe in working only with local, indigenous Piedmontese grape varieties and we fiercely defend the local winemaking traditions both in the vineyards and in the cellar. We farm 13 hectars of vineyards (and some hazelnut trees) in three different sites covering the southern Langhe. The Dogliani plot is probably the family’s most prestigious land and we like to consider ourselves as “Dolcetto Specialits”. Our farming is organic and we just use the indigenous yeasts in all the fermentations. Sulphur is absent or added only in small quantities during the pressing or bottling (just when necessary). The wines are not fined. They are aged in big oak barrels, cement tanks or raw amphora. This wild ferment Chardonnay is 100% certified organic & biodynamic and is produced with minimal intervention. We strive to show the delicacy, tension, & purity of expression of Ontario-grown Chardonnay with this small-production collaboration. Brilliant straw colour, youthful, light-intensity aromas of white peach, green apple, citrus, with delicate integrated subtle lees. Bright lemony acidity on the palate, round mouthfeel, & refreshing. It has a brilliant medium purple colour in the glass. On the nose, it's all about fresh ripe red & black fruit: cherry, strawberry, wild raspberry; with hints of intense spice, it also has a granite minerality. On the palate it is light-bodied, with a vibrant acid and grippy though delicate tannins. It intermingles with surprisingly powerful fruit & spice; punching above its weight in flavour. It is very balanced with low alcohol. This light red pairs with all manner of dishes: from barbecue meats to grilled salmon and veggies, to spicy dishes. Two real taste enthusiasts, winemaker Julien Bonneau and Chef Alexandre Lavigne were eager to share their own range of wines and created Cuvée Emma made from vineyards located on the hillsides of St Bonnet sur Gironde in the south of the Charente Maritime, a sub-region near the Ocean, on the outskirts of Bordeaux. Emma embodies the purity of a natural wine, Alexandre Lavigne and Julien Bonneau attach a great importance on sustainable vine cultivation were the balance of the plant and grape maturity are essential. Winemaking is naturally done without the use of sulphites. Made from Merlot grapes; on the nose it has notes of black fruits and candied fruit. On the palate, it is a fruit-forwarded and full-bodied wine, with a beautiful length. It pairs perfectly with red meats and umami flavours, such as cacio e pepe or carbonara pastas.
