Revel Cider - Reinette Russet
Reinette Russet is cider, but drinks like a wine. The aroma is classic russet-skin nuttiness. The flavour is in the world of a gentle orange wine, if you made it with Starfruit instead of grapes. Citrus, salt and fallow earth sing together on your tongue. Easy acid and light, chalky tannins round it all out.It's in the world of the famous French cidre Coat Albret if you've had it, without the sweetness.Reinette Russet was bottle fermented this year for natural bubbles. 2021 Paradiso (Virgo)
The wine itself went through a cool 10-day maceration on the skins, beginning to ferment when we delicately pressed the fruit. We finished off fermentation in stainless steel at controlled temperatures before sending the finished wine to our neutral French barrels for aging. The wine itself is lean and soft with a restrained profile of lime popsicles, orange peel, lavender and mint. We like drinking it ice cold with wasabi peas but you do you! Volume: 750mlABV: 11%

2021 Thirst Trap Pet-Nat
Thirst Trap is a canned Pét-Nat we made by fermenting direct press Vidal juice on lightly pressed Cabernet Franc skins for 3 days. This is a technique we experimented with in 2020 (remember Pep Talk?) and expanded during our 2021 vintage. Before the fermentation was finished, we canned the wine with 13 grams of residual sugar that, once fermented out in can, lends Thirst Trap a heavy spritz. Inspired by our love of sparkling red wine, Thirst Trap is a deep red colour, low in tannin, fleshy, and honestly just tastes like the colour purple.Volume: 250ml

Crew Sauvage Pinot Noir VQA Niagara Peninsula 2020
A true Niagara Villages wine focused on a blend of organic, biodynamic and uncertified sustainably farmed vineyards throughout the Peninsula with a focus on Quarry Road (Vinemount Ridge), Cherry Road (Twenty Mile Bench) & the Tintern Vineyard. The grapes are harvested, destemmed, wild fermented "whole berry" for 18 days, before gravity flow takes them into French barrels. This fresh Pinot Noir was then left to age for 16 months in barrel before bottling. The 2020 vintage is marked by elegance over power, brimming with brightness and approachability straight out of the gate, with not hard edges. Light ruby-red in the glass, high toned aromas of cherry, strawberry, pomegranate, backed by roasted herbs, spice and pepper. Great weight and poise for Ontario, but still the light to medium bodied Pinot Spectrum with balanced tannins and acids holding on to fine and lengthy finish. Certainly a vintage on the edge, marked by many cold and wet days. However, as every mother does, mother (nature) kicked in and saved the day with a gloriously warm and dry finally to the cooler growing season.Volume: 750mlABV: 12.5

We are Fausto and Cinzia Cellario, third generation of winemakers in the village of Carrù, on the western outskirts of the Langhe hills. We believe in working only with local, indigenous Piedmontese grape varieties and we fiercely defend the local winemaking traditions both in the vineyards and in the cellar. We farm 13 hectars of vineyards (and some hazelnut trees) in three different sites covering the southern Langhe. A word game between “Ramato”, meaning “copper”, and “amato”, which stands for “loved one”. It is not an Orange Wine, it is not a Rosè… It’s just ILRamato. A Ramato style wine that conceals the freshness, texture, and charm of Pinot Grigio. Like a bridge between the worlds and interpretations of Pinot Grigio, ILRamato is able to uncover a forgotten wine pleasure.Behind the purple/grayish color of the Pinot Grigio berries is a rare concentration of anthocyanins – the colored pigments so common in red grapes but almost non-existent in their white counterparts. Although, ironically, Pinot Grigio is most often thought of as an almost transparent wine – in color and character – some vinification techniques (similar to those for red wines) unveil its true copper hues and spirit.With ILRamato, we harvest the clusters at their peak ripeness and, destemmed, the grapes macerate at a low temperature. This way, the must is able to extract the iconic color from the grapeskins ahead of fermentation, hence maintaining a contemporary brightness and fragrance.Although a common way of fermenting white grapes until the ‘50s, maceration was quickly dismissed as archaic once new technologies were made available and its use faded. Pearce Predhomme - Chenin Blanc 2020
A collaboration between Nicholas Pearce and Will Predhomme to create wines from their favourite regions. This Chenin is made from old bush vines grown in decomposed granite/quartz on the Helderburg (Clear Mountain), in the southwestern-most corner of Stellenbosch.Behold, Chenin Blanc! The most widely planted varietal in South Africa simply shines in this charming expression from Stellenbosch. Sourced from old vines and naturally fermented, expect elegant notes of white peach, lemon and tangerine with an underlying layer of crisp yellow apple. Bright and fresh on the palate, but with good depth and concentration, this wine is ready to drink now but will also cellar nicely for the next 2-3 years. Keint-He - Keint-He Vacay Chardonnay VQA St. David's Bench 2020
Keint-He Winery & Vineyards is a boutique winery located in Prince Edward County. The winery has a strong focus on varietals that are typically grown in Burgundy, specifically Pinot Noir and Chardonnay; through which they truly express the best of the County with wonderful individual expressions. Keint-He’s approach to winemaking is as down-to-earth as it gets and their quality is second to none. The grapes for this wine were grown in the St. David's Bench sub-appellation. The fruit was hand harvested, processed and then aged in neutral French Oak barrels for six months. This wine has a vibrant straw colour. The nose shows ripe tropical fruits, including honeydew and pineapple. Lemon meringue and subtle oak spice are also present. The mouth exhibits a blanketing viscous texture, with flavours of pineapple and lychee. Low acids complemented with a baking spice finish, make this wine an approachable crowd pleaser. A collaboration between Nicholas Pearce and Will Predhomme to create wines from their favourite regions. This Pinot Gris is made from vines planted in Willamette Valley AVA, Oregon. Brilliant straw colour with youthful yet intense aromas of white peach, stone fruit, green apple and citrus. Bright acidity and freshness on the palate with a round mouthfeel but it stays surprisingly refreshing. Distinctly Oregonian; a clean, fresh style of Pinot Gris. This Pinot Gris is zesty and fresh, and pairs amazingly with sushi, ceviche and even richer meals like fish and chips! It is also beautiful with white meats, such as chicken and turkey. Grains d'Estuaire Cuvée Emma Rouge 2020
Two real taste enthusiasts, winemaker Julien Bonneau and Chef Alexandre Lavigne were eager to share their own range of wines and created Cuvée Emma made from vineyards located on the hillsides of St Bonnet sur Gironde in the south of the Charente Maritime, a sub-region near the Ocean, on the outskirts of Bordeaux. Emma embodies the purity of a natural wine, Alexandre Lavigne and Julien Bonneau attach a great importance on sustainable vine cultivation were the balance of the plant and grape maturity are essential. Winemaking is naturally done without the use of sulphites. Made from Merlot grapes; on the nose it has notes of black fruits and candied fruit. On the palate, it is a fruit-forwarded and full-bodied wine, with a beautiful length. It pairs perfectly with red meats and umami flavours, such as cacio e pepe or carbonara pastas. Domaine Frédéric Brouca Champs Pentus Blanc VDF 2019
Unlike many winemakers, Frédéric Brouca is largely self-taught and took no formal courses on viticulture or winemaking. His concept of growing grapes and winemaking focuses on reducing human intervention in the processes, and making it as natural as possible. The Champs Pentus Blanc is a Roussanne dominant blend with Grenache Blanc, grown organically on hillside vineyards in the outskirts of the Faugères appellation. After being hand-harvested, the grapes are destemmed and gently pressed. A long and slow fermentation in stainless steel tanks and neutral oak barrels (only 20% of the juice!), enhances the aromas and the flavour. Medium gold in color, on the nose the Champs Pentus Blanc is highly floral, with aromas of candied quince and beeswax. On the palate, it is light to medium bodied, but with lush texture and a honeyed aftertaste. It has a lovely fresh bitterness, apricot skin-like acidity and a playful and airy finish.
